Bang Bang Shrimp Tacos

There are nights when dinner needs to be stupid easy, and Bang Bang Shrimp Tacos are built for exactly that. We’re starting with frozen popcorn shrimp, letting the air fryer handle the hard part, and making a quick sauce while the shrimp cooks. That is about as much multitasking as I’m interested in when everybody is hungry.
This is also one of those recipes where I’m not going to make you hunt down one exact tortilla, one exact topping, or one exact level of heat. Use what you like. The whole thing is supposed to make dinner easier, not turn into a scavenger hunt at the grocery store.
The shortcut is the point
Frozen popcorn shrimp is doing us a favor here. It is already breaded, already portioned into bite-size pieces, and ready to get crisp without you setting up a breading station in the kitchen. Air-fry it according to the directions on whatever package you bought, and while that is going, make the bang bang sauce.
The sauce is simple: mayonnaise, sweet chili sauce, fresh lime juice, and Sriracha. The sweet chili sauce brings sweetness and a little tang, the lime keeps everything bright, and the Sriracha lets you decide how spicy you want to get. A dash is fine. More than a dash is also fine.
Once the shrimp is hot and crispy, toss it right into that sauce. I like green onions in mine, so I snip those straight into the bowl too. You want every little piece of shrimp coated so you get creamy, sweet, spicy sauce in every bite.
Use whatever tortillas make sense
In the video, I’ve got flour tortillas, including the little street-taco size, but this is not a recipe where the tortilla police are coming after you. Use the flour tortillas you already buy, grab the smaller ones if you want more little tacos, or use a larger size if that is what is in the pantry.
That flexibility goes for the toppings too. I use pre-shredded lettuce because again, we are making an easy dinner. Shredded cheese works great, and sour cream or salsa are right at home here if you want them. The sauced shrimp already has a lot going on, so you can keep the rest simple or load them up. Personal preference wins.
Why the texture works
The best part of these tacos is the contrast. You start with crispy breaded shrimp, then coat it in a creamy sauce that is sweet, tangy, and as spicy as you decide to make it. The lettuce adds a cool crunch, the green onion brings a fresh bite, and the tortilla catches all the sauce that tries to escape.
They feel fun without requiring much actual cooking, which is my favorite kind of weeknight math. You get the payoff of a loaded taco night without browning meat, chopping a pile of vegetables, or making three different sauces.
Dinner without making life harder
If the school year is in full swing, work has been wild, or you just do not feel like doing the most, keep this one in your back pocket. A one-pound box of popcorn shrimp plus a few refrigerator staples can get dinner moving fast, and everybody can finish their own tacos however they want.
That is the kind of shortcut I’ll take every time. Feeding hungry people matters more than proving you made every single component from scratch.

Ingredients

  • 1 lb frozen popcorn shrimp
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • Juice of 1 lime
  • Sriracha to taste
  • Green onions to taste, sliced or snipped
  • Flour tortillas as needed
  • Pre-shredded lettuce to taste
  • Shredded cheese optional, to taste
  • Sour cream optional, for serving
  • Salsa optional, for serving

Instructions

  • Air-fry the frozen popcorn shrimp according to the package directions, until hot and crispy.
  • While the shrimp cooks, add the mayonnaise, sweet chili sauce, lime juice, and Sriracha to a large bowl. Stir until smooth and well combined.
  • Add the cooked shrimp to the bang bang sauce and toss until every piece is well coated.
  • Add green onions to taste and toss again.
  • Fill flour tortillas with the bang bang shrimp. Add pre-shredded lettuce and shredded cheese as desired.
  • Finish with sour cream, salsa, or any other taco toppings you like, and serve right away.

Notes

  • Frozen popcorn shrimp brands and styles can have different air-fryer temperatures and cook times, so use the directions on the package you buy.
  • Matthew uses flour tortillas and shows street-taco-size tortillas, but says to use whatever kind of flour tortilla you like.
  • The Sriracha and taco toppings are intentionally flexible. Add them to taste.
