Ingredients

  • ½ pound thinly sliced chicken breasts
  • 1 to 2 teaspoons olive oil
  • Cajun seasoning enough to coat the chicken
  • 1 box Velveeta Mac & Cheese
  • Water enough to cover the pasta
  • 1 package frozen broccoli cooked according to package directions
  • Cheese sauce packet from the macaroni and cheese
  • ½ cup buffalo hot sauce
  • 1 packet ranch seasoning
  • Chopped green onions for garnish

Instructions

  • Heat the olive oil in a large skillet over medium-high heat.
  • Coat the chicken with Cajun seasoning and add it to the hot skillet.
  • Cook for 2 to 3 minutes per side, allowing the chicken to develop a golden crust until it's about three-quarters cooked through.
  • Add the macaroni from the box to the skillet.
  • Pour in enough water to completely cover the pasta.
  • Bring to a boil and cook uncovered until the pasta is tender and most of the liquid has been absorbed.
  • Stir in the cooked broccoli.
  • Add the cheese sauce packet from the macaroni and cheese and stir until smooth and creamy.
  • Stir in the buffalo hot sauce and ranch seasoning until everything is well combined.
  • Continue cooking for 1 to 2 minutes until heated through.
  • Garnish with chopped green onions and serve immediately.
