Preheat oven to 350°F.
In a large bowl, combine the shredded rotisserie chicken, spinach and artichoke dip, whipped cream cheese, Parmesan, chopped sun-dried tomatoes, Italian seasoning, and garlic powder. Mix until fully combined.
Without separating the rolls, slice the entire pack of Hawaiian rolls horizontally through the center.
Place the bottom half of the rolls in a baking dish.
Spread the chicken mixture evenly over the rolls.
Place the top half of the rolls back on.
(Optional) Brush the tops with garlic butter.
Bake uncovered at 350°F until warmed through and melty, about 10-15 minutes.
Slice and serve warm.
