One Pot Lasagna Gnocchi

One Pot Lasagna Gnocchi


Serves 4 people

Ingredients

  • 1 lb Italian sausage
  • 2 –3 tbsp tomato paste
  • 1 16 oz package gnocchi
  • 24 oz marinara sauce
  • 7 –8 oz ricotta cheese
  • Pinch Italian seasoning
  • 3 oz shredded parmesan cheese

Instructions

  • In a large skillet over medium heat, brown 1 pound of Italian sausage until fully cooked, breaking it up as it cooks. Do not drain the fat — that’s flavor.
  • Add 2–3 tablespoons of tomato paste directly to the pan. Stir and cook for 4–5 minutes, allowing it to caramelize and deepen in color.
  • Add the 16-ounce package of gnocchi to the skillet. Stir and cook for 4–5 minutes so the gnocchi lightly toasts and absorbs all that sausage flavor.
  • Pour in the 24 ounces of marinara sauce and stir to combine. Let everything simmer together until the gnocchi is tender and the sauce is heated through.
  • In a separate bowl, combine 7–8 ounces ricotta, a pinch of Italian seasoning, and 3 ounces shredded parmesan. Mix until smooth.
  • When serving, spoon the gnocchi into bowls and add a generous dollop of the ricotta mixture on top.
