Creamy Poppyseed Chicken Casserole

Ingredients

  • 3 cups rotisserie chicken shredded or chopped
  • 1 can cream of celery soup
  • 1 can cream of chicken soup
  • 8 oz sour cream
  • 1 –2 teaspoons poppy seeds to taste
  • 4 sleeves Ritz crackers crushed
  • 2 sticks butter melted

Instructions

  • Preheat oven to 350°F.
  • In a mixing bowl, combine the chicken, cream of celery soup, cream of chicken soup, sour cream, and poppy seeds. Stir until smooth and well combined.
  • In a separate bowl, mix the crushed Ritz crackers with the melted butter until evenly coated.
  • Sprinkle half of the Ritz mixture into the bottom of a 9×13 baking dish.
  • Spread the chicken mixture evenly over the crackers.
  • Top with the remaining Ritz cracker mixture.
  • Cover with foil and bake for 20 minutes.
  • Remove foil and bake an additional 15 minutes, until bubbly and lightly golden on top.
  • Let rest for a few minutes before serving.
