Lasagna Soup Meets Tortellini
Ingredients
- 1 lb Italian sausage
- 6 oz tomato paste
- Garlic powder to taste
- Onion powder to taste
- Crushed red pepper flakes to taste
- 1 (67 oz) jar marinara sauce
- 18 oz refrigerated spinach and ricotta tortellini
- 12 oz frozen broccoli florets optional
- ½ cup Ricotta cheese for serving
- ¼ cup Parmesan cheese for serving
- Italian seasoning to taste
Instructions
- In a large pot or Dutch oven over medium heat, brown the Italian sausage until fully cooked, breaking it up as it cooks. Drain excess grease if needed.
- Stir in the tomato paste and cook for 3-5 minutes to deepen the flavor.
- Season with garlic powder, onion powder, and crushed red pepper flakes to taste.
- Pour in the jar of marinara sauce and stir until well combined.
- Stir in the spinach and ricotta tortellini.
- Simmer until the tortellini are tender, stirring occasionally.
- Microwave the broccoli florets according to the package directions and add to the pot.
- In a separate bowl, Mix together ricotta, parmesan and italian seasoning.
- Serve hot, topped with a dollop of ricotta mixture.
