Lemon Sun-Dried Tomato Chicken
The Chicken Dinner I Keep Talking About
Alright, y’all. There are a whole lot of chicken dinners out there. Some are perfectly fine. They get everybody fed, nobody complains, and that’s a win in my book. Then there’s the kind of dinner that makes you stop and say, “Now THAT is good.” Lemon Sun-Dried Tomato Chicken falls into that second category for me.
In the video, I said this might be my favorite recipe from Keep It Simple, Y’all. That’s a pretty big statement when you’ve got a whole cookbook to choose from, but I meant it. There’s just something about this dish that hits all the right notes. It’s comforting without being dull and full of flavor without feeling like it’s trying too hard.
And that’s what I want dinner to be. Not a competition. Not a reason to dirty every dish in the house. Just something you’re happy to sit down and eat at the end of a long day. If everybody gets quiet for a minute because they’re busy enjoying supper, even better.
A Little Bright, A Little Cozy
The thing I love about Lemon Sun-Dried Tomato Chicken is the balance. You get that bright, lively lemon flavor alongside the deeper, savory taste of sun-dried tomatoes. One keeps things from feeling too heavy, and the other brings that cozy, satisfying quality you want from a chicken dinner. Neither one needs to shout to be noticed.
It’s the sort of combination that feels a little different from the usual weeknight routine, but it doesn’t need a fancy occasion. You know those nights when you want something good but can’t even begin to decide what sounds good? This is the kind of dish I’d tell you to keep in mind. Familiar enough to feel comforting, interesting enough that you won’t be bored halfway through the plate.

Real-Life Cooking is Still Good Cooking
One of the reasons I wrote Keep It Simple, Y’all was to make dinner feel less like homework. People are busy. Some of y’all are getting home from work, some are wrangling kids, and some are just tired of having to answer the question, “What’s for dinner?” every single day. I get it. Even when you like to cook, that question can wear you out.
I don’t believe good food has to come with a whole speech about doing things the hard way. Use the help you need. Make dinner fit your life instead of rearranging your entire life around dinner. I’m not handing out gold stars for unnecessary kitchen suffering, and neither should anybody else.
That easygoing spirit is all through the cookbook, and it’s why I love sharing a dish like this one. It has the flavor and comfort you’re looking for, while still feeling like the kind of food a regular person can be excited to make.
A Supper Worth Coming Back To
You don’t need company coming over to justify a dinner that tastes this good. Make something you’ll enjoy on an ordinary Tuesday. Put it on the table when the day has been long. Or save it for a night when you want a meal that feels a little more special without acting like you’re hosting a cooking show.
My favorite kind of recipe is one that makes you feel good about feeding yourself and the people around you. Doesn’t matter if you’re cooking for a full house or just making sure you’ve got a decent supper. The point is to eat something you actually enjoy, not to prove anything to anybody. This chicken belongs in that conversation.
