Too Tired Tortellini is my answer for nights when boiling water is about all the ambition I’ve got. Chicken mozzarella tortellini gets cozy with creamy Alfredo, petite diced tomatoes, and spinach for a fast, filling dinner with almost no prep. Add Parmesan and red pepper flakes if you’ve got them, then call everybody to the table.

Back to School Too Tired Tortellini

Some nights I have a whole plan for dinner. Other nights, the plan is basically, “Can I boil water?” If the answer is yes, we’re eating. Too Tired Tortellini is my easy tortellini dinner for exactly those nights. It’s creamy, filling, fast, and built from grocery-store shortcuts that do the heavy lifting for you.
I’ve made this no less than a hundred times, and there’s a reason I keep coming back to it. You get tender chicken mozzarella tortellini, creamy Alfredo sauce, little bites of tomato, and spinach all in the same pot. It tastes like real comfort food without asking you to chop vegetables, make a sauce from scratch, or stand at the stove all night.
Dinner for the nights you have nothing left
Back-to-school season is an obvious time for a dinner like this, but tired doesn’t check the calendar. Work ran late. Practice ran late. The baby didn’t nap. You forgot to thaw the chicken. You just don’t feel like cooking. There are about a million reasons somebody might need a shortcut in the kitchen, and not a single one of those reasons is anybody else’s business.
That’s the whole point of this recipe. If taking a couple shortcuts gets dinner on the table and everybody gets fed, that’s a win in my book. You do not get bonus points for making your own Alfredo on a Tuesday night when you’re already running on fumes.
Store-bought shortcuts are still dinner
Yes, I use jarred Alfredo sauce here. If you want to make your own, that’s great. I love that for you. But you absolutely do not have to. Use the kind you like, pour it in, rinse the jar with a little splash of water so you get the good stuff clinging to the sides, and keep moving.
Frozen chopped spinach does the same kind of work for us. No washing, no chopping, no pile of fresh spinach taking over half the refrigerator. The petite diced tomatoes add color and a little brightness against all that creamy sauce, while the chicken mozzarella tortellini makes the whole thing hearty enough to count as dinner.
It’s a short ingredient list, and most of it can live in the pantry, freezer, or refrigerator until you need an emergency dinner. That is exactly the kind of backup plan I like to keep around.
Make it yours without making it complicated
Once everything is hot and creamy, you can leave it alone and eat. It’s good just like that. If you have Parmesan on hand, throw some in. I like a few red pepper flakes in mine too because a little heat cuts through the richness, but that part is completely optional.
And please do not feel like you need to transfer this to some beautiful serving bowl. Y’all know damn good and well we’ll eat straight out of the pan around here. Put a spoon in it, grab some plates, and dinner is handled.
The best part is that this comes together in less than 20 minutes. The tortellini only needs a few minutes in boiling water, and after that your job is mostly to stir everything over low heat until the spinach and tomatoes are heated through. Nothing fancy. Nothing fussy. Just a warm, creamy pot of pasta that shows up when you need it.
A fed family is the goal
Recipes like Too Tired Tortellini are why I’ll always defend a good kitchen shortcut. Feeding people matters more than proving how hard you worked to feed them. If tonight’s dinner starts with a bag, a can, and a jar, you’re still the one who made sure everybody ate.

Ingredients

  • 1 18 oz package chicken mozzarella tortellini
  • 1 14.5 oz can petite diced tomatoes
  • 1 14.5 oz jar Alfredo sauce, any variety you like
  • A splash of water for rinsing the Alfredo sauce jar
  • 1 12 oz bag frozen chopped spinach
  • Grated Parmesan cheese optional, to taste
  • Red pepper flakes optional, to taste

  • Large Dutch oven or deep pot
  • Colander

Instructions

  • Bring a large pot of water to a boil. Add the tortellini and cook for 3 minutes.
  • Drain the tortellini in a colander. Set the pot back over low heat and return the drained tortellini to the pot.
  • Add the petite diced tomatoes and Alfredo sauce.
  • Rinse the empty Alfredo sauce jar with a small splash of water and pour that into the pot.
  • Add the frozen chopped spinach and stir everything together.
  • Keep stirring over low heat for the next few minutes, until the tomatoes and spinach are heated through.
  • If you like, stir in or sprinkle on Parmesan cheese and a few red pepper flakes. Serve hot.
